This is a yummy Summer salad that utilizes fresh vegetables from your garden.
You start with 5 cucumbers, 2 tomatoes and onion.
Peel the cucumbers and slice them up.
Remove the seeds from the tomatoes and dice them up.
Then dice up half of the onion.
Place the onion, tomatoes, and cucumbers in a gallon sized zipper bag.
Then whisk some vinegar, oil, lemon juice, salt, pepper, sugar, and parsley together and pour into the zipper bag. Then you let the bag marinate in the fridge for 6-8 hours. If you can let it go 24 hours, even better.

Cucumber Salad
5 large cucumbers
2 tomatoes
1/2 medium onion, minced
¾ cup vinegar
1/3 cup oil
1 Tbsp lemon juice
1 tsp salt or more
1 tsp pepper
1 Tbsp sugar
1 Tbsp chopped parsley
In a gallon sized zipper bag, place cumcuber, tomatoes and onions. Whisk remaining ingredients together in a bowl and pour into zipper bag. Let soak 6-8 hours in refrigerator rotating bag half way through. Drain most liquid out of bag and place salad in a serving dish. Serve with a slotted spoon.
